Cyclops Bakeshop is a culmination of Kara Bolt’s vast baking experience. Kara was a vegan/gluten-free baker at Marie Catribs – so if you ever enjoyed a sweet treat from Marie’s, Kara may have baked it. When Marie’s closed, it was a sign for her to start her own business.
To start, Cyclops only offers frosted sugar cookies. That’s it. Nothing more. Boring, right? Kidding!
The Cyclops cookies are incredibly beautiful (and tasty!). With a degree from Kendall, and having worked in several bakeries and high-end patisseries, Kara’s background blends perfectly as you can see in the images.
Making a good vegan sugar cookie is quite a task and it took her trying about 20 different variations to come up with the perfect cookie. The ingredient list looks long, but additions like aquafaba (the ubiquitous chickpea brine egg substitute) are what make it all work.
Just as with other bakeries in town such as Rise Authentic Baking Co. or Bit Baking Co., Kara hopes to one day turn what is currently a side business into a full-time endeavor. But don’t expect these cookies to ever be mass produced. She says she wants to keep things small. Even with a brick and mortar location, she’s more dedicated to the craft than the bottom line. She does plan to expand beyond cookies at some point.
For custom orders, Kara’s happy to take on the challenge of creating anything you could ever think of. In fact, she says the more unique, the more fun for her. She makes her own cookie cutters, so do your best to stump her.
If you’re wondering about the name and the logo – Cyclops is the name of Kara’s one-eyed cat.
